We’re always looking for healthy, flavorful and easy lunch recipes to bring to work or make at home with the kiddos. So, naturally this Yellowfin Tuna Salad Sandwich fits the bill. Made with high quality tuna, a hard-boiled egg, dijon, a bit of spice all between toasted bread makes this one of the most delicious tuna sandwiches we’ve ever had.  Plus, it’s high in protein, low calorie and is a delightful lunch or light dinner recipe.


  • 6 ounces tonnino yellowfin tuna fillets in olive oil
  • 1 tablespoon sour cream
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 1/8 teaspoon cayenne pepper
  • 1 hard boiled egg, diced
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 4 slices bread
  • Toppings
  • 1 medium tomato, sliced
  • 1/4 cup arugula or baby spinach
